Oysters in Dingle Gin and Lemon

Step 1: Pour yourself a large G&T on the rocks…..

Dingle Gin Oysters

Serves 3-4 | Prep 5 mins


12 Cromane Rock Oysters

1 tbsp of Dingle Gin

1 tbsp fresh lemon juice

1 tbsp white wine vinegar

¼ cup of light olive oil

2 tbsp chopped chives

Salt and ground black pepper


  1. In a bowl, mix together the Dingle Gin, lemon juice, olive oil, and chives.
  2. Add salt and pepper to taste.
  3. Shuck your Cromane rock oysters (please see our “how to shuck” tab).
  4. Place a spoonful of the dressing over the oysters.
  5. Serve and enjoy
